Molasses, like raisins, is a good source of carbohydrates and energy due to its high sugar content. It also contains a high amount of minerals. Molasses meets a large portion of the daily calcium, iron, potassium and magnesium requirements. Due to its high mineral content and high absorption rates, it is recommended to include it in the diet of pregnant and breastfeeding women, patients with tuberculosis and people in recovery.
One of the nutrients that molasses is a very good source of is chromium. The chromium content of tissues decreases significantly in pregnancy, malnutrition and with age. Chromium is found in the structure of the glucose tolerance factor. And it affects glucose metabolism through insulin use. When we consider that the amount of chromium in foods is greatly reduced as a result of the refining process, the importance of chromium in molasses becomes even more apparent.
As in different types of molasses, the phosphorus to calcium ratio in grape molasses is again much higher than the desired ratio. Phosphorus and calcium content are found in many foods. However, in such foods, calcium intake is high only if the phosphorus ratio is low and the calcium ratio is high. Since the calcium/phosphorus ratio is low, it can be said that it is a very important foodstuff because calcium is strongly absorbed. Phosphorus and calcium can make calcium absorption sufficient by correcting the disrupted balance in the intestine. Molasses contains traces of phosphorus, at most 85 mg. On the other hand, since the amount of calcium is very high, this balance, the calcium-phosphorus balance, is in the desired ratios. Iron taken in tablet form can cause stomach ache and constipation, and since iron absorption in plant foods is low; anemia can occur in people who cannot consume enough animal foods due to economic reasons. Molasses meets 1/3 of the daily iron requirement.
Magnesium, like potassium, is related to fluid balance. Thus, it ensures the regular functioning of muscles and nerves. Due to the fact that calcium, potassium and magnesium work together, molasses, which contains enough of these three minerals, is also gaining importance.
