How to Make Arbutus Molasses: Arbutus fruits, which ripen in late September and early October, are not only unripe on the tree but also fall to the ground by being beaten by wind and people. The fruits collected from the tree and the ground are filled into sacks and brought to the place where the dessert will be made.<\/div>\n

The shells of the marsh fruits are broken with hand beaters. The breaking process is repeated one by one. The broken ones are placed in boats, cauldrons, basins, helke, tins and pots and filled with water up to the brim. After waiting for two days, they are placed in a specially made filtering vessel. The mouth of the vessel is opened and the sugar water is collected in front of it, the filled containers are transferred to the cauldrons on the fire. The boiling process is started.<\/div>\n

The boiling process that starts in the morning continues until the evening. During boiling, as the liquid boils, foam forms on the surface of the cauldron. The stirring continues as the foam on the surface of the cauldron is removed with a bowl with a handle.<\/div>\n
The foam is removed with a perforated colander. The foam is collected in a container. As a result of boiling, most of the water in the cauldron evaporates and molasses is formed.<\/div>\n

The molasses of the onion is reddish dark brown. If it is aged the next day, it becomes more durable and shiny. The molasses obtained is consumed as a dessert with meals or as a sherbet.<\/div>\n
One kilo of molasses is obtained from six kilos of fruit.<\/div>\n
