Angelica Root is a hardy herbaceous plant from the parsley family, two to four years old. There are about thirty species of angelica growing in the Northern Hemisphere and New Zealand. The two species that are important for our subject are Angelica Sylvestris and Angelica Archangelica (A. officinalis). Jam is made with these in the Bursa region. The root of the plant is dark colored, has a special odor, has a bitter taste and a thick texture, containing tannins and volatile oils.
