What is mahaleb?

Mahleb

It is a tree with white flowers that grows up to 10 m tall. It is common in European and Eastern Mediterranean countries. It is grown in Tokat, Zile, Niksar, Amasya, Çorum and Mardin in Turkey. It is also known as İdris tree, endirez, endürüz, keniro (Diyarbakır), scented cherry tree, melem, wild cherry.
To obtain the seed, the ripe fruits are peeled. It is dried in the sun. The seed is broken by passing between cylinders and the seed is removed from the seed coat by sieving. It is a product of Turkey's exports.

It is especially added to cakes, buns and pastries. It is used in the liqueur industry. Its tree, branches and bark have a pleasant smell due to the coumarin they contain. For this reason, in the past, tobacco smoking rods were made from its branches. It is also used in the perfumery industry and its oil in the paint industry.

Areas of Use: Dried fruits are used as spices. It gives a unique and pleasant smell especially to pastries. The hard-shelled seeds inside the fruits are widely used as spices and also strengthening.
